Ingredients

  • 1 egg
  • 1 cup self-raising flour
  • 1 cup milk
  • Salt
  • 200 g blueberries
  • Olive oil

Blueberry Pancakes!

  1. Place the egg, flour, milk and a pinch of salt into a mixing bowl.
  2. Whisk everything together until you have a smooth batter.
  3. Heat a large frying pan on medium heat adding a bit of olive oil.
  4. Pour a couple of spoonfuls of batter on to the hot pan to form a circle. Sprinkle the blueberries on top.
  5. Flip the pancake once little bubbles appear on the surface and cook for a further 1-2 minutes until golden.
