- Place the egg, flour, milk and a pinch of salt into a mixing bowl.
- Whisk everything together until you have a smooth batter.
- Heat a large frying pan on medium heat adding a bit of olive oil.
- Pour a couple of spoonfuls of batter on to the hot pan to form a circle. Sprinkle the blueberries on top.
- Flip the pancake once little bubbles appear on the surface and cook for a further 1-2 minutes until golden.
