Ingredients

  • 1 egg
  • 1 cup of grated kumara
  • 1 slice middle bacon
  • 1 large Portobello mushroom
  • 1 tomato, sliced
  • 1 Tablespoon olive oil
  • Salt and pepper to taste

Kumara Breakfast Stack!

  1. Pre-heat your oven to 180 degrees Celsius and line a baking tray with baking paper.
  2. Squish your grated kumara together to form a large patty. In a large pan pour the olive oil and cook the kumara patty and the egg on a medium heat for 4-5 minutes or until both are cooked.
  3. Once the patty and egg are cooked, place them on the baking tray and stack the bacon, mushroom and tomato– make sure the egg is on top!
  4. Season with salt and pepper and place in the oven for 15-20 minutes.
