• 1 cup flour
  • 1 ½ tsp ground cinnamon
  • 1 ¾ cups rolled oats
  • 1 cup dessicated coconut
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 125g butter
  • ¼ cup golden syrup
  • 2 tbsp water
  • 1 tsp bicarbonate of soda

ANZAC Cookies!

  1. Pre-heat oven to 150 degrees Celsius. Line your baking tray with baking paper.
  2. In a bowl sift together flour and cinnamon. Add rolled oats, coconut and sugars – mix well.
  3. Heat the butter, golden syrup and water in a small pot until the butter melts and it is well combined. Make sure it does not boil!
  4. Remove from heat and stir in the bicarbonate of soda. Pour immediately into the dry ingredients and stir until well combined.
  5. Roll into small balls and place on your tray.
  6. Bake for 16 minutes for a chewy biscuit or 20 minutes for a crunchy biscuit.
